Open Country Cheeses are vacuum packed in 20kg polyethylene bags wrapped in a Open Country branded cardboard carton.

Open Country Colby is a softer, moister and milder cheese than Cheddar because it is produced through a wash curd process. It is considered a semi-hard cheese with a mild gentle flavour.

Open Country Kahui Cheese is a cheddar-style cheese with a distinct flavour and texture. It is a washed curd cheese with a mild, clean and slightly sweet flavour. The texture is elastic and has a typical snap on bending. The cheese is capable of developing a Swiss type flavour.

Open Country Gouda Cheese is a dry salted, hard cheese with a well-rounded mild, nutty and sweet flavour. It is a very versatile cheese. It has a firm smooth body and creamy texture. This dry salted product does not have the eye formation of a typical brine salted Gouda.
Suggested uses include: it is a very versatile cheese suitable for shredding, slicing and also as a cooking cheese, on account of its good meltability.
Open Country Edam Cheese is a pressed semi hard to hard cheese. It is made from skim or semi skim milk, which reduces the fat content. This sets it apart from its near relative Gouda, which is made from whole milk. Mild, clean and slightly more delicate in flavour, Edam is a washed curd cheese usually consumed young, when the texture is elastic and supple.

Open Country Cheddar Cheese Processing is a semi-hard cheese with good keeping qualities. It is a very young natural cheese with a mild flavour and firm smooth body and has good keeping qualities. Open Country Cheddar Cheese Processing can be shipped from two weeks after manufacture.

Open Country Mozzarella Curd Cheese is a semi-hard cheese, made from pasteurised cow’s milk. It is a reduced fat cheese with a smooth body, very mild, clean and mozzarella style flavour. Mozzarella Curd cheese has the composition and functionality similar to conventional Mozzarella.
Open Country Mozzarella Curd shows excellent melt and stretch qualities ideal for a range of applications including use as a pizza topping or in bakery applications. Mozzarella Curd can also be shredded or cut into consumer packs or, used as a direct replacement for conventional Mozzarella on a one-to-one basis in further processed cheese applications.
